8 eggs

Chop 11 bell peppers in medium size. Add 2 tablespoons of olive oil to a copper pan and heat it. When the oil is hot, add the peppers and fry for 1-2 minutes until they turn bright green. It is important not to kill the peppers too much at this stage. Then take the roasted peppers on a plate and grate 2 pink tomatoes directly on your pan. Cook the grated tomatoes for about 3 minutes. While your tomatoes are cooking, break 8 eggs into a large bowl and whisk them. After the egg white and yolk are well mixed, add a pinch of salt and pepper. Add the pre-roasted peppers to your tomatoes, which you have cooked for about 3 minutes, and cook for another 1-2 minutes. At this stage, you can add salt and pepper according to your taste. Then add the beaten eggs and lower the pan. Using a wooden spoon, scrape the bottom of the pan from the edge to the middle. This will allow the egg to touch the hot bottom and cook faster. After the egg is cooked, cut 1 tablespoon of butter into small pieces and add to the menemen. Your delicious menemen is ready when you decorate it with chili pepper and fresh thyme.
